24 Vanilla Wafer Cookies (Nilla brand - is what I have used)
3 - 8 oz packages Cream Cheese - softened (I leave it out of the fridge for an hour or so)
1 cup White Sugar
3 eggs
1 tsp Vanila Extract
1/4 tsp Ground Nutmeg
1 - 12 oz can Cherry Pie Filling (or your choice)

Directions:
Directions:
Preheat oven to 325º.
Line 24 muffin cups with paper liners. Place 1 wafer in each cup.
In a large bowl - beat cream cheese & sugar until smooth.
Beat in eggs - one at a time, then, stir in nutmeg & vanilla.
Pour mixture evenly into 24 prepared muffin cups, filling each 2/3 full.
Bake in preheated oven for 20 mins or until set.
Cool completely, then top with cherry pie filling.
Cover & refrigerate until ready to serve.

These are delicious (and so easy to make)! Do ahead of time and put in fridge.

Keep a batch in the freezer - top with pie filling just before serving. :)
