2-1/2 lbs small zucchini, unpeeled
1 lb onion
1 lb and a bit of white sugar
1-1/2 cups white vinegar
1/2 tsp pepper
scant 1/4 cup salt
3/4 tbsp. pickling spice, sewn or tied in a cheesecloth bag

Directions:

Use the meat grinder to grind the zucchini and onion (the small blade) then add the rest of the ingredients and cook and stir until thickened. Seal in sterilized jars. It makes 3 or 4 pints.

In 2016 I had no tomatos, but wanted to make relish. I decided to try using zucchini instead, and I thought it made a wonderful relish.
