One pound jar pickled Beets--drain and cut in strips

2 medium-large tart apples, peeled and diced

W Tbsp mayonnaise
1 Tbsp sugar,
1/8 tsp salt
pinch of pepper

Directions:
Directions:
Put beet strips and diced apple in a bowl that has a cover.
Mix other ingredients together and gently stir into this.
Top with chopped fresh parsley if yo plan to serve same day, or add the parsley a few hours before serving, if making ahead.

Keep in refrigerator for up to 4 days, covered.
