- 7.5c egg whites (if purchasing cartons of egg whites, ensure that the ingredients are ONLY egg whites(
- 40tsp coconut flour
- 1 (~4oz) can jalapeno + 1 can green chilis (other mix ins can be substituted: habanero or other hot peppers)
- 6-10tbs salsa (Green Mountain Gringo Hot preferred)
- 10oz shredded cheddar (extra sharp or extra aged preferred)
- 4 links of Thin and Trim Chicken sausage links (Garden Vegetable Flavor preferred)
- 2.5c fat free cottage cheese
- 1.25c fat free sour cream

- Take all ingredients and blend the hell out of them! Mix however possible until homogeneous and somewhat smooth. Small chunks are OK. We use a hand mixer, but blender would work as well.

- Bake until done

- use a large size muffin pan or mini loaf pan and distribute mix into pre-greased (or pam sprayed) sections. (we typically pour 3/4c into each section for a single serving egg cup)

The original recipe we started with years ago called for each individual serving to be cooked in separate ramekin dishes.

- Bake at 350 or 375 degrees F until slightly browned around edges by the pan

(Cooking time is highly dependent upon the type of pan you use and how evenly your oven heats. Our current practice is we make very large batches, but our oven sucks, so we typically have to cook each batch 35-45 minutes each.)

These egg cups rise and deflate like a souffle, but end up much more dense than a souffle.

- Remove from oven and let cool before removing individual egg cups from the pan

This recipe is very easy to modify. Change your mix-ins depending upon how spicy you'd like the end results. Just keep in mind that the more fresh veggies added will also add water to tge mix. We love adding habanero or scotch bonnet peppers.

This recipe was modified and multiplied over the years. The original recipe was for two servings which started out with two eggs, and two egg whites. The recipe above is approximately 20-fold of the original recipe from DaVita kidney friendly cooking website.
