Cottage Pudding

Cake:
1/2 C flour
2 tsp baking powder
1/2 tsp salt
1/2 C sugar
Mix
1 egg, well beaten
1/2 C milk
1/2 C butter melted





Directions:
Directions:
Preheat oven 400 degrees bake 20 to 25 minutes
Stir gently into the flour mixture and pour into a 8" square pan

Cook sugar, cornstarch and water in a double boiler till thick and transparent (about 20 minutes)
Take off burner and add butter, nutmeg, and vanilla.

Serve over apple dumplings or cottage pudding.
 

Vanilla Sauce


Ingredients:

Mix in a small sauce pan
1/2C sugar
1 tbsp. cornstarch
add, stirring constantly
1 C boiling water
Boil 5 minutes, remove from heat

Stir in

2 tbsp. butter
1 tsp. vanilla
pinch of nutmeg
pinch of salt

To make lemon sauce omit the vanilla and add 1 1/2 tbsp. lemon juice
Cut cake in square and place in bowl drizzle vanilla sauce over it
