4 medium Irish (white) potatoes, peeled and cut up into large pieces
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 T. butter
2 T. corn starch
2/3 cup milk

Directions:
Directions:
Cut up potatoes. Cover with water. Cook about 15 minutes on medium-high heat. The potatoes will still be firm. Leave about 3/4 cup water in the pan.
Add 1/2 teaspoon salt, 1/4 teaspoon pepper and 1 1/2 tablespoons butter. Put 2 tablespoons cornstarch in 2/3 cup milk and mix. Add to the potatoes and cook on medium heat until juice has thickened.
Add more seasoning to suit your taste
(Sprinkle with grated cheese and a dollop of sour cream)

This is a very quick potato dish!

Stewed potatoes were always served at my Grandmother Laura Estella Armstrong Scott's Sunday dinner table. My daddy, Frank Andrew Scott, loved this dish. He would add lots of pepper!!
