8 large eggs, cold
1 lf. bittersweet or semisweet chocolate, coarsely chopped
1/2 unsalted butter, cut into 1/2 inch chunks

Preheat oven to 350º.
Spring form pan is required.
Butter an 8-inch spring form pan. Line bottom of pan in parchment paper. Wrap pan bottom tightly in heavy duty aluminum foil. Place pan in a large roasting pan.
Directions:
-Melt butter and bittersweet chocolate in a large bowl set over a pan of simmering water. Remove bowl, stir to combine and let cool to luke warm.
-Beat eggs.
-Whisk egg mixture into chocolate mixture, 1/3 at a time, until well-combined.
-Scrape batter into prepared pan. Place springform pan in a roasting pan.
Pour hot water to 1 inch deep into the roasting pan.
-Bake until the cake is set around the edges and a thin glazed crust has formed on top, which is 22-25 minutes for an 8 inch pan and 18-20 minutes for a 9 inch pan.
-Remove cake pan from water bath and set on wire rack to cool. Cover and refrigerate overnight. Will keep up to 4 days.
-About 30 minutes from serving, remove spring form pan sides, invert on a sheet of waxed paper, and peel off parchment paper. Turn cake right side up on cake plate.
-Top with powder sugar, chocolate glaze or fruit sauce.
