1/8 t salt

Directions:
Beat egg whites until stiff but not dry. Sift together sugar, salt and cream of tartar and add gradually. Beat until smooth and glossy. Fold in vanilla. Spoon mixture into well-buttered 9” pie pan. Hollow out center to ¼-in thickness, spreading mixture up sides of pan but not onto rim. Sprinkle with nuts. Bake at 275 for about 1 hour, or until delicately browned. Cool thoroughly.

Filling: Melt chocolate and water in double boiler, stirring constantly until chocolate is melted. (This recipe was written before microwaves; if careful, you can melt chocolate in microwave on low.) Cool slightly. Add vanilla and fold in whipped cream. Pile chocolate mixture into meringue shell.
