1 1/4c vegetable oil
2c sugar
3 eggs
1t baking soda
1t salt
3c flour
3c peeled and diced granny smith apples
2t vanilla
3/4c chopped pecans

Topping:
1c firmly packed light brown sugar
1 stick butter
1/4c evaporated milk
1t vanilla
Directions:
Directions:
Grease and flour a bundt pan. Blend oil sugar and eggs. Sift dry ingredients together then add to sugar/oil mixture. Blend well. Add vanilla, fold in apples and nuts. Mixture will be thick. Spoon into pan bake at 250º for 1 hr 15min to 1 hr 30min.

Cool 15 min, invert. Let cake cool completely before drizzling topping over it.

Topping:
Bring ingredients to a full boil at medium heat, stirring often. Continue boiling and stirring 5 min. Remove from heat , keep stirring topping as it cools. Drizzle over cooled cake. You may want to make 1 1/2 recipes of the topping!
