3lbs Yukon Gold Potatoes, peeled and sliced paper thin
3cups milk
1 clove garlic
3T unsalted butter, softened
Coarse salt and freshly ground black pepper
1cup heavy cream
5 ou Gruyere cheese, grated

Directions:
Directions:
Preheat oven to 325 degrees with rack set in lower 1/3 of oven
Combine potatoes with milk in a large saucepan over high heat
Bring to a boil and then reduce to low
Cover and simmer until potatoes are just tender, about 3'
Place a colander over a large bowl and drain potatoes, reserving milk
You should have 2 cups of thick, starchy milk
If not, add enough milk to make volume 2 cups
Rub a 3 1/2 quart oval baking dish with butter and garlic
Arrange potatoes in baking dish and season with salt&pepper
Dot with remaining butter, pour over reserved milk&cream
Sprinkle cheese over top
Bake until cheese has turned a deep golden brown and milk has thickened
80-90 minutes
