4 to 6 Poblano peppers cut in half the long way and seeded
1 lb Italian sausage, hot or mild
1/4 c chopped onion
1 tsp dry Italian seasoning
1/4 tsp each pepper and salt
1 8.8 oz pkg Uncle Ben's precooked brown rice
3/4 jar any flavor spaghetti sauce
1 can diced tomatoes with chiles if desired
1 c shredded cheese

In large skillet, brown meat and onions. Add rest of ingredients (reserve cheese) and cook until bubbly and blended. Fill peppers and top with cheese. Bake at 350º for 40/50 until bubbly. Can sprinkle more cheese on top before serving.

This freezes well and I always have extra peppers as it makes a lot of filling. I even use the mini colored peppers for extra filling.
