1 c. sliced celery
1/2 c. chopped onion
1 clove garlic, minced
1 tbsp. vegetable oil
2 cups water
1 can chicken broth
1 can black-eyed peas
1/2 lb. cooked ham, cut in cubes
1/4 tsp. crushed red pepper
1 bay leaf
1 cup uncooked long-grain rice

Directions:
Directions:
Saute' celery, onion and garlic in vegetable oil untill tender.

Add all other ingredients (except the rice), and bring to a boil. Add the rice, cover and simmer about 45 minutes.
