4 (8 oz) fish fillets such as red snapper or wild caught salmon
Salt and Pepper
8 oz creme fraiche
3 tbsp Dijon mustard
1 tbsp whole-grain mustard
2 tbsp minced shallots
2 tsp drained capers

Directions:
Directions:
Preheat oven to 425º.
Line sheet pan or baking dish with parchment paper. Place the fish fillets skin side down on the pan and salt & pepper generously. Combine creme fraiche, 2 mustards, shallots, and capers to create a sauce. Spoon the sauce over the fish completely covering each fillet. Bake for 10-15 minutes until barely done. (The fish will flake easily at the thickest part when done.). Serve hot. Spoon sauce from pan over fish.

Company worthy but also easy. Can prep sauce ahead of time and refrigerate. Usually there will be extra sauce which I use on a turkey sandwiches and will save for about a month. Pairs well with the autumn roasted vegetables recipe.
