1 lb. fettuccine noodles
2 tsp. salt
1 c. heavy cream
3 T. butter
2/3 c. freshly grated Locatelli cheese
1/4 tsp. nutmeg, freshly ground if available
Freshly ground pepper, to taste

Cook the pasta in plenty of salted water until done. Be sure it is still a bit firm.

In a large saucepan, simmer the cream and butter over medium heat until thickened (approx. 2-3 minutes). Turn the heat down to low and add the cooked fettuccine and toss lightly; add the grated cheese, nutmeg and pepper; toss briefly and serve.

When we were in Rome, we ate at Alfredo's Restaurant where this dish was made famous and this recipe is just about as good.....minus Rome, of course!
