1/4 cup red wine
1 tbs. chopped fresh chives
2 tbs. olive oil
1 tsp. finely choppped fresh garlic
1 lb. boneless sirloin tip steak
4 slices(1/2-inch thick) onion
1/4 cup sour cream
3 tbs. crumbled blue cheese
1 tsp. chopped fresh thyme leaves
1/2 tsp. Dijon-style mustard

Directions:
Directions:
Combine wine, chives, oil and garlic in a large plastic food bag; add steak. Tightly seal bag; turn bag several times to coat steak well. Place in 13x9-inch pan. Refrigerate at least 2 hours or overnight, turning occasionally. Combine sour cream blue cheese, leaves, and mustard in a small bowl. Prepare grill; heat until coals are ash white. Remove steak from marinade;reserve marinade. Place steak on grill; place onion slices next to steak. Cover; grill, basting occasionally with marinade and turning once. Cook meat as desired. Place onion slice on each steak serving, add blue cheese topping.
