6 slices of bacon cut up into 1 inch pieces - cooked
1 whole medium yellow onion- diced
3 carrots, scrubbed and diced
3 stalks celery - diced
6 whole small or medium russet potatoes - peeled and diced
8 cups chicken broth or homemade broth ( i made my own)
3 tablespoons all purpose flour
1 cup whole milk
salt and pepper to taste
1/2 cup heavy cream
1 teaspoon parsley
1 cup cheese( sharp cheddar)
green onion for top

Directions:
In a dutch oven brown bacon until crisp. drain leaving at least a good tablespoon of bacon grease. Add onions, carrots, celery stir and cook about 5 minutes. Add diced potatoes and cook additional 5 minutes stirring. Pour in chicken broth and cook at least 10 minutes or until potatoes are tender. Whisk together flour and milk and pour into soup. Allow soup to cook additional 5 more minutes. I used a immersion mixer to blend some of the soup. You want some lumps. Next, I added the heavy cream. Stir and you are ready for a delicious pot of potato soup.
Garnish with cheese, green onion


Chicken Broth: Bone in chicken, 1 celery stalk, 1/2 onion, 1 garlic clove
salt and pepper and 1 chicken Knorr bouillon cube.
