1 tablespoon unflavored gelatin
4 eggs, separated
1 1/4 cups sugar
1/2 cup lime juice
1/2 teaspoon salt
grated rind of 1 lime
3 drops green food coloring (optional)
1 9-inch baked pie crust
1 pt. heavy cream, whipped

Directions:
Directions:
Soften gelatin in 1/2 cup water. Beat egg yolks, stir in 1 cup sugar, mix lime juice, salt, 3 drops of food coloring. Stir into egg yolks; place in double boiler over boiling water. Cook until mixture thickens. Add gelatin and lime rind. Mix well and chill. Beat egg whites in a bowl until stiff. Add 1/2 teaspoon cream of tartar and 1/2 cup sugar. Whip into lime mixture and pour into pie crust. Chill. Top with whipped cream.
