1 1/2 C flour
3/4 C brown sugar
1/2 tsp soda
1/2 tsp salt
1/3 C oil
1 egg
1/2 C buttermilk
1 tsp Vanilla
1 C diced rhubarb
1/2 cup chopped nuts

Topping
1/4 C brown sugar
1/4 C chopped nuts
1/2 tsp cinnamon

Directions:
Directions:
Mix dry ingredients first. Then add wet ingredients until moistened. Fold in rhubarb and nuts.
Grease muffin pan
Combing topping and sprinkle over top of each muffin. Bake at 375º somewhere between 20-25 minutes. Depends on muffin tin cup size. Cool ten minutes and remove from pan to rack.

This recipe was given to Mary Newcomb by her mother. Mary gave it to Nancy Hakari who passed it on to me. Nancy is a woman I met in my ASL class. She was one of my students and we found out we were kindred spirits. She is a retired teacher from Juneau. Her parents own the golf course. She invites my kids to her annual gingerbread house party. She has tables full of candy and ready-made houses out of graham crackers. The kids have a wonderful time decorating their own houses. She normally has a pinata for the kids in her garage and always gives them a gift when they leave. She is an amazing woman.
