1 tbsp. vegetable oil
1 qt. chicken broth or stock
1cup chopped yellow onions
3/4 tsp salt
1/4 tsp fresh ground black pepper
1/4 tsp cayenne pepper1 (8-ounce) ham hock, scored
1 tbsp. minced garlic
1 1/2 lbs. green beans, trimmed and halved

Directions:
Directions:
Add the oil in a cast iron Dutch oven.. Add the onion and saute until tender, about 3 minutes.Season with salt, pepper, and cayenne. Add the ham hocks, garlic, and beans. Add enough chicken broth to almost completely cover the beans. Bring to boil, reduce the heat and simmer for 2 hours. Remove from the heat and serve with the cooking liquid.

Personal Notes:
The salt and pepper used here were suitable for the ham hock we used. However, depending on the cure of your ham hock, you may require more or less salt. That said, hold off on adding the salt until about halfway through the cooking process. If I do this in the crock pot, I cook them on low for about 8 hours.
