2 sticks unsalted butter
1 cup dark brown sugar
1/3 cup sugar
1 large egg
2 teaspoon vanilla
1/2 teaspoon soda
1/2 teaspoon salt
1 3/4 cup flour
1 cup old fashion oats
1 cut grated coconut
1 1/4 cup chopped nuts
1 1/2 cup Andes peppermint crunch baking chips

Directions:
Directions:
Cream butter and sugars until fluffy. Beat in egg and vanilla. Add soda, salt and flour. Stir in oats, coconut, nuts and peppermint chips.
Bake at 350 degrees for 12 to 15 minutes.
