2 1/2 cup flour
2 1/2 cup sugar
2 1/2 teaspoon soda
2 1/2 teaspoon cinnamon
2 cups oil
5 eggs
3 3/4 cup grated carrots
1 can 10 oz crushed pineapple; un-drained
1 1/4 teaspoon salt
1 1/4 cup nuts
1 1/4 cut coconut

Directions:
Directions:
Stir oil, sugar, carrots and eggs together. Add the flour, cinnamon, soda and salt. Mix well.
Pour in greased and floured pans (3 8x8 pans, 3 cups in each pan) or (one 11x15 pan).
Bake at 350 degrees for 35 minutes.


Frosting:
Mix together 12 oz cream cheese, 1 1/2 stick oleo, and 1 1/2 teaspoon vanilla. Add powdered sugar until the mixture reaches a spreadable consistence.
