1 1/2 lbs. sweet potatoes, peeled and cubed
1 medium apple, peeled and cut into 8 pieces
2 T. butter
1 T. lemon juice
2 tsp. minced fresh ginger root
1/2 tsp. salt
1/2 tsp. pepper
Pork
1 tsp. water
1/2 tsp. cornstarch
3 T. maple syrup
2 tsp. wasabi or stone-ground mustard
2 tsp. soy sauce
1/2 tsp. pepper
2 pork tenderloins (3/4 lb. each), cut into 1-inch slices
1 T. olive oil
2 garlic cloves, minced

Directions:
Place sweet potatoes and apple in a large saucepan with water to cover. Bring to a boil over high heat. Reduce heat to medium, cover and cook just until potatoes are tender, 10-12 minutes. Drain. Mash potatoes and apple. Stir in next five ingredients. Keep warm.

Stir water into cornstarch until smooth; add syrup, mustard, soy-sauce and pepper. Add pork; stir to coat. Heat oil in a large skillet over medium heat. Brown pork. Add garlic; cook until meat is no longer pink, 3-5 minutes. Serve with fresh greens, sweet potatoes and pan juices.
