2 c sugar
2 c flour
1 tsp salt
2 tsp baking soda
3 tsp cinnamon
1 1/2 c vegetable oil
4 eggs
3 c grated carrots
1 c chopped nuts (optional)
1 tsp vanilla

Directions:
Directions:
Sift together sugar, flour, soda, salt and cinnamon. Stir in oil. Add eggs, one at a time, mixing well after each addition. Add carrots, nuts and vanilla, mixing thoroughly. Pour into a floured and greased 13 X 9 X 2" cake pan. Bake in a 350ºF oven for 30 min. Cool in pan. Spread with cream cheese icing.
Cream Cheese Icing:
1/2 c melted butter
1 tsp vanilla
1 (8 oz) pkg cream cheese softened
1 (1 lb) box confectioners sugar
Combine butter, cream cheese and vanilla mixing well. Gradually add confectioners sugar beating until smooth. Spread on cooled cake.
