2 1/2 cups Water
3/4 tsp Salt
2 1/2 cups Minute Rice
3 tbsp Vegetable Oil
1 1/2 cups coarsely chopped Celery
3/4 cup chopped Onion
1/4 cup Cornstarch
2 cups Chicken Stock or Gravy
2 tsp Soya Sauce
2 cups slivered cooked Chicken
3 ripe Tomatoes, cut in thin wedges

Directions:
Directions:
Bring salt & water to a boil, stir in rice, turn off heat and let sit for 5 mins. Heat oil in skillet. Add celery & onions, cover & cook over low heat until vegetables are just tender, not browned. Meanwhile mix cornstarch & a small amount of chicken stock, then add remaining stock & soya sauce (or just added gravy). Add stock to vegetables stirring constantly over medium heat until sauce is clear and has thickened. Add tomatoes and continue cooking until tomatoes are heated. Pour over rice and serve.
