1 T. Butter
1/2 C. chopped Onion
6 C. Water
3 T. Chicken Base
1 Bay Leaf
4 Medium Potatoes (peeled and diced)
1 pint 1/2 and 1/2 or Milk
1tsp. salt
1 T. Parsley Flakes
1/2 tsp. Black Pepper
1 small bag Knoephle dumplings (about 1 1/1 lbs.)

Directions:
Directions:
In a medium-sized soup kettle, sauté onion in butter. Add water, chicken base, bay leaf, potatoes, and knoephle. Bring to boil, reduce heat and simmer 20 minutes. Add milk or 1/2 and 1/2, seasonings, simmer 5-10 minutes. Remove bay leaf.
