1 lb lump crab meat, divided
1/2 c crab roe ( this is pretty much impossible to find, so I omit it)
1 lg onion, finely diced
1 bay leaf
2 tsp minced garlic
4 T butter
4 T flour or other thickening agent
2 c crab or seafood stock, or chicken stock
2 c milk, any kind
1 1/2 c heavy cream
1/4 to 1/2 c dry sherry
Salt & pepper to taste
2 T chopped chives
1 t worc. sauce
Small squeeze of fresh lemon
Dash of hot sauce
Freshly grated nutmeg
Pinch of sugar

Garnish:
Paprika
Chopped chives
Sherry

Directions:
Directions:
Sauté onions in butter until soft.
Add the bay leaf and minced garlic. Sauté until fragrant and the garlic is soft.
Sprinkle the flour over the butter & veggies and stir until all lumps have disappeared.
Add the seafood stock and bring to a boil.
Reduce the heat to medium low.
Add the milk & cream and simmer. Bring it to a near boil, but not quite boiling.
Add the picked crab, being careful not to break it up to much.
Add all other ingredients and turn the pot off.
Top each bowl with paprika & chives.
Add more sherry to each individual bowl, if desired.
