1 c shortening
1 1/2 c sugar
3 eggs
3 c unsifted flour
1 tsp baking soda
1/2 tsp salt
1 1/3 c none such (Borden) ready to use mincemeat or (1/2 of 27-oz jar)

Pre-heat oven to 375º F.

In large mixer bowl, beat shortening and sugar until fluffy. Add eggs, beat well. Stir together dry ingredients: gradually add to shortening mixture. Mix well. Stir in mincemeat. Drop by rounded teaspoonfuls, 2 inches apart, onto greased baking sheets. Bake 8 to 10 minutes or until lightly browned.

*** Note do not over cook they will get to dry. They are to be moist. This is a cake like cookie

To make clean up easier skip greasing the baking sheets and line with parchment paper instead. For larger cookies use a cookie scoop (this will make fewer cookies, about 3 dozen).
