1/2 tsp. salt
1/2 cup flour
2 eggs, lightly eaten
1 lb. shrimp, shelled and deveined
3 cups oil for frying
1/3 cup vinegar
4 tbsp. pineapple juice
2 tsp. shoyu
1 tbsp. cornstarch
1/2 cup sugar
3 pineapple slices, cut into 1/2" pieces

Directions:
Directions:
In a bowl, add salt and flour to beaten eggs, mix well. Add shrimp to flour mixture. Heat oil to 375ºF. Add shrimp and deep fry until light brown. Remove and drain on paper towels.

In a saucepan, combine remaining ingredients; bring to a boil and simmer 1 1/2 minutes. Pour over shrimp.
