1/2 lb. bacon, chopped
1 lb. lean ground beef
1 Portuguese sausage, casing removed and meat chopped in 1/4" cubes
2 cloves garlic, minced
1 cup uncooked rice
1/2 onion, chopped
1 green pepper, chopped
1 can (28 oz) stewed tomatoes
1 can (8 oz) tomato sauce

1 cup water
2 tbsp. ketchup
3/4 tsp. salt
1 tsp. chili powder
1/2 tsp. black pepper
1/4 tsp. sage
1/2 tsp. thyme
1/2 tsp. oregano

Directions:
In large pot, fry bacon until clear, drain fat. Add beef, sausage, and garlic; cook for about 3 minutes. Add the uncooked rice, and cook for another 3 minutes, stirring occasionally. Add onions, green pepper, stewed tomatoes, tomato sauce, water, ketchup and seasonings.

Bring to a boil, cover, lower heat and simmer until rice is done, around 35 minutes, stirring occasionally. When done, skim fat from top before serving.
