1 1/2lb Italian sausage

Produce
1/2 cup Basil, fresh leaves
2 bay leaves
4 garlic cloves
3 cups onion
2tsp dries oregano

Canned Goods
1 28oz. can Tomatoes fire roasted
6 cups Chicken stock
2 tbsp tomato paste

Pasta
8oz. Lasagna noodles

Spices
1 pinch of pepper
1/2 tsp red pepper flakes
1/4 tsp salt
2tsp olive oil

Dairy
1/2 cup grated Parmesan cheese
8oz. Ricotta
2 cups shredded mozzarella

Directions:
Directions:
Heat olive oil in a large pot over medium heat. Add sausage, breaking into bite sized pieces, and brown for 5 minutes. Add onions and cook until softened. Add garlic, oregano, and red pepper flakes. Cook for 1 minute. Add tomato paste and stir well. Cook for 3 or 4 minutes.

Add diced tomatoes, bay leaves, and chicken stock. Stir to combine. Bring to boil and reduce heat and simmer for 30 minutes. Break up lasagna noodles and add into soup. cook until al dente.

While pasta is cooking, prepare the cheese sauce. In a small bowl, combine the ricotta, parmesan, salt, and pepper.

To serve, place a dollop of cheese sauce in each soup bowl, sprinkle mozzarella cheese on top and ladle the hot soup over the cheese.
