5 medium zucchini
2 T extra virgin olive oil
1 carrot, grated
6 garlic cloves, pressed
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp red pepper flakes
1 can crushed tomatoes
1/2 tsp salt
1/2 c Parmesan cheese, grated

Directions:
Directions:
Spiralize zucchini to make noddles. Heat 1 tsp of the oil in the pan. Add zucchini and cook for 3 minutes, stirring occasionally. Remove the zucchini from the pan. Drain well and press down with paper towels to get rid of any extra moisture; set aside. For the sauce, heat remaining oil and add garlic and spices. Cook for one minute. Add the carrot and crushed tomatoes. Cook over medium heat for 15 minutes. Add zucchini noodles and cheese to the pan. Bring to a boil, reduce heat and simmer for 2 minutes. Top with additional Parmesan cheese before serving, if desired.
