1 tbsp. olive oil
1 lb. Italian sausage
1/2 cup onion, finely diced
1 1/2 cups Arborio rice
4 cups hot chicken broth
3/4 cup shredded romano cheese
1/4 cup butter
salt & pepper to taste
3/4 cup white wine
1 cup peas

Directions:
Heat oil in skillet and sauté sausage, breaking up with wooden spoon until browned and fully cooked. Remove with slotted spoon and set aside. Add butter to drippings, then onions and pinch of salt and pepper. Cook 3-5 minutes until onions are soft. Add rice and cook, stirring to coat, about 1 minute. Add wine and reduce for 3-4 minutes, stirring.

Reduce heat to medium-low, add 1 cup broth at a time, stirring constantly. Continue adding broth until rice is cooked and liquid is absorbed, about 20-30 minutes. Fold in sausage, peas, and cheese. Let sit 2-3 minutes before serving.
