3 Eggs
2 C Sugar
1 C Salad Oil
2 Squares Unsweetened Chocolate - Melted
1 t. vanilla
2 C Grated peeled zucchini
3 C Flour
1 t Salt
1/4 t Baking Powder
1 t Baking Soda
Directions:
Directions:
Beat eggs and add sugar and oil.

Melt unsweetened chocolate and add to egg mixture with vanilla and zucchini.

Sift: flour, salt, baking powder and baking soda.

Add to wet mix.

Pour into greased loaf pan.
Bake at 350 degrees 45 minutes until knife comes out dry.
