2 T soy sauce
1 T unseasoned rice vinegar
2 tsp. sugar
1/4 to 1/2 tsp. (max) hot pepper flakes
1 pound green beans, trimmed, cut into 2 to 3 inch lengths
1 T vegetable oil
2 T minced garlic
2 T minced fresh ginger

In small bowl, mix soy sauce, rice vinegar, sugar, chile flakes and white pepper. Set aside

Set 10 to 12 inch skillet over high heat. Heat until hot. Add beans and 1/4 cup water. Cook, stirring once, for 3 to 4 minutes or until beans are bright green and slightly crunchy to bite. Uncover. Cook until any remaining water has evaporated

Add oil, garlic and ginger to pan. Stir-fry tor 1 to 2 minutes or until green beans and garlic are lightly browned. Stir soy mixture. Add mixture to pan. Bring to a boil. Cook, stirring, for 2 to 3 minutes or until most of liquid has evaporated and sauce thickens and coats beans. Pour into serving dish. Serve hot or cool.
