Directions:
Brown meat and drain.

Add all tomato ingredients and any Italian seasonings desired. Simmer 10 minutes.

Boil lasagna noodles until done.

In 9" x 13" pan put a layer of meat sauce (very little) then a layer of noodles, meat sauce, cottage cheese, mozarella cheese. Then repeat starting with the noodles, tomato sauce, etc. End with meat sauce on top. Sprinkle mozarella cheese and grated parmesan/romano cheese on top.

Bake at 375 degrees for 25 - 30 minutes. Let set about 10 minutes before serving so it can be cut into squares.

Personal Notes:
Ricotta cheese can be substituted for the cottage cheese. I prefer to mix some of the sauce into the cheese. Also, I add an additional 1 pound of sausage to the sauce for extra flavor.
