2 c all purpose flour
2 tsp baking powder
1 1/2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 1/2 c white sugar
1 1/2 c vegetable oil
4 eggs
2 c grated carrots
1 (14 oz) can crushed pineapple (well drained)
1/2 c chopped nuts

Directions:
Directions:
Mix together flour, baking powder, baking soda, salt and cinnamon. Add sugar, oil and eggs. Beat these until well mixed. Stir in carrots, pineapple and nuts. Pour into a greased and floured 7 X 13"pan or bundt pan. Bake at 350ºF for 30 to 40 min or until inserted toothpick comes out clean.
Cream Cheese Icing:
1/2 c butter
1 (8 oz) pkg cream cheese
1 tsp vanilla
3 c icing sugar
little bit of pineapple juice
Beat all ingredients well adding sugar gradually.
