One whole prime rib / 13#s to 15#s
Salt / pepper
Celery
2 onions
3 / 4 garlic cloves

Directions:
Directions:
Heat oven to 500*
Place meat bone side down
Season with salt and pepper
Place garlic cloves, 2 onions quartered and 6 stalks of celery beside roast
Cook for 30 minutes, then turn oven down to 325* for three hours covered
If you like it crispy on top, uncover last 30 minutes
Use the strained juice as aujus
