3 tbsp Butter
3 tbsp Flour
2 Eggs (beaten)
2 c. Milk (heated)
1 lb. Filo
1 lb. Crumbled Feta
Additional Butter for Filo

Directions:
Directions:
Melt butter, add flour, stir together.

Remove from heat, whisk in hot milk, gradually, cook over moderate heat. Stirring constantly until it thickens.

Combine some of the hot sauce into beaten eggs, blend, then stir in rest of eggs, cook over low heat for about 1 minute. Remove from heat and let cool.

Add feta and stir to mix. Butter half of the fila, then add the filling, spread evenly. Finish with the rest of filo, mark into portions.

Bake at 325º for about an hour until golden. Serve warm.
