1 lb. butter (room temperature)
1 box confectioner's sugar (use 4 tbsp. in dough, save the rest)
1 tsp. vanilla (or almond)
2 - 2 1/2 c. cake flour
3 1/2 oz. almonds (toast lightly in oven, ground medium fine)

Directions:
Place butter in mixer bowl and whip smooth. Add the sugar, beat smooth, then add flavoring and flour, then add ground almonds. Dough should be about the consistency of putty, and should not stick to hands. If it does, place in refrigerator for about 1/2 an hour.

Take pieces about the size of a walnut and roll into balls and place 1 inch apart on cookie sheet (ungreased). Flatten slightly with forefinger, and bake in 350º oven for 15-20 minutes until a light sand color. Remove from oven and place on prepared sugared surface.

Tear off a long length of waxed paper and place on flat surface. Cover waxed paper with a thin sifted layer of Confectioner's sugar. As you take cookies from one, let set a minute or two, then place on sugared surface. Sift more sugar on top until cookies are covered. When cool, lift and place paper cases (small muffin papers) and store in an air tight container. (Keep for about a month.)
