Enough pierogies to fill crockpot
1 cup butter
15-20 baby carrots, sliced lengthwise
1-2 vidalia onions, sliced and quartered
6-8 oz mushrooms, sliced
15-20 stalks of asparagus, trimmed and cut into 1-inch pieces
1 red pepper, julienned
Cherry tomatoes, cut in half
Crushed peppers
Grated parmesan or mixed Italian cheeses

Slice vegetables and place in separate small bowls

Melt butter in frying pan. Add carrots and saute 5-7 minutes. Add mushrooms and onions, cooking another 7-10 minutes until all done. Carrots should be crisp-tender.

Layer pierogies in crockpot with butter and cooked and raw vegetables. Lightly sprinkle crushed peppers and grated parmesan throughout.

Cook on high for three hours
