1 1/2 cups unsalted butter
1 cup granulated sugar
3/4 cup light brown sugar
1 1/2 teaspoon Kosher salt
2 teaspoons vanilla
3 eggs
1 tablespoon baking soda
3 3/4 cups all purpose flour
1 bag (20 oz.) chocolate chips

Heat oven to 350º

Line baking sheet with parchment paper.

Blend butter, sugars, salt, and vanilla on low speed until light and fluffy - about 3 minutes.

Gradually add eggs (one at a time). Scrape down the bowl after each addition.

Sift baking soda and flour together. Add to the creamed mixture all at once and mix on low speed just until combined. Scrape down bowl as needed.

Using a rubber spatula, fold in chocolate chips, mixing just until combined.

LET DOUGH SIT OVERNIGHT

Scoop the dough onto prepared baking sheets using a scoop of about 2 tablespoons (a #40 scoop) about 1 1/2 inches apart. Bake until golden brown. 12-15 minutes. Rotate and switch the baking sheets as necessary for even baking.

Allow the cookies to cool for a minute on the baking sheet then transfer using a spatula to a cooling rack and allow to cool completely. Store in air tight container.
