1-2 lbs. hamburger
9 flour tortillas
4 C. cheddar cheese, shredded
1 can refried beans

Homemade Enchilada Sauce
1 Tbs. olive oil
1 small onion, diced
3 cloves garlic, minced
1 Tbs. chili powder
1 Tbs. Cumin
1 tsp. salt
1/4 tsp. oregano,
1 915 ox.) can tomato sauce
1 C chicken stock

Directions:

Make homemade enchilada sauce or use 2 packages of enchilada sauce and mix with 3 C water, 1 can (12 oz.) tomato paste, and 1 garlic clove minced.

Brown the meat, Drain. Stir in one third of the sauce. Spread another third on the bottom of a greased 13x9x2 in baking pan. Place three tortillas over sauce tearing to fit bottom of pan. Spoon half of meat mixture over tortillas, sprinkle with 1 1/2 C cheese. Add three more tortillas, Spread refried beans over tortillas, top with remaining meat. Layer remaining tortillas top with remaining sauce. Sprinkle with remaining cheese. Bake uncovered at 350º for 35-40 minutes. Let stand 10 minutes before cutting. Serve with taco sauce, sour cream, chili pepper, chopped onion, and/or guacamole if desired

Keith loves this recipe. It was given to me by his mother. I make my own enchilada sauce with my homemade tomato sauce. It is delicious.
