2 20 oz. cans chunk pineapple
1/3 c. sugar
3/4 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 c. grated cheddar cheese
1/2 c. butter (see note)
4 T. (1/4 c.) pineapple juice
1 c. crushed corn flakes

Directions:
Directions:
Drain pineapple, reserving juice. Mix sugar, flour, salt, baking soda in small bowl. Spray 2 qt. casserole with Pam. Put flour mixture in bottom of casserole. Add drained pineapple to casserole dish and mix in. Add grated cheese to casserole and mix.

Melt butter in microwave. Drizzle half over mixture and mix. Drizzle with pineapple juice. Sprinkle crushed corn flakes on casserole. Drizzle remaining butter over corn flakes.

Bake at 350º for 35-40 minutes.

From Joanne Fluke series. Original recipe called for 1 cup butter, but that was too much! I thought 1/2 cup would be adequate, and Jim even agreed!
