"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
2 pounds of baby carrots
1/4 c. butter
1/4 c. brown sugar
1/8 c. honey
1/4 tsp. salt
1/8 tsp. ground white pepper

Directions:
Directions:
Place carrots into a large saucepan, pour in enough water to cover carrots (about an inch is usually enough), bring to a boil, reduce heat to low, cover and simmer carrots until tender - 8 to 10 minutes. Drain and transfer to a bowl.

For glazing, melt butter in a large frying pan; stir in sugar, honey, salt and pepper until all are dissolved.

Transfer carrots into glazing, stir until carrots are fully covered.

Personal Notes:
Personal Notes:
Keith Ufford brought these carrots to one of the choir's Christmas parties, and they were a hit! I tried making them one time and failed. Possibly I got distracted by something as I was working on the glazing. I think they're worth another try.
