1 egg
2 Tablespoons mayo
1 teaspoon dry mustard
1/2 teaspoon Old Bay seasoning
1/4 teaspoon garlic powder
1 teaspoon Worcestershire Sauce
1/2 lemon juice
pepper to taste
8 Saltine crackers (or Ritz)
16oz/1lb jumbo lump crab meat
Oil for cooking
Panko bread crumbs (optional)

Directions:
Directions:
Combine first 9 ingredients, then mix in crab meat. Form mixture into patties and coat with panko bread crumbs.

Heat skillet with oil over medium heat. Cook cakes until golden brown on each side about 4 minutes per side for patties, a little less if making mini crab cakes. Drain briefly on paper towels and serve hot with favorite dipping sauce.

Personal Notes:
I like to coat the cakes in panko bread crumbs, makes for a great texture. Also if you like you can add a dash of cayenne pepper and/or finely chopped and sautéed green onions and bell pepper.
