1 lb. Italian sausage
1 medium onion
3 garlic cloves, chopped
2 (28 oz.) cans diced tomatoes with juice (or diced tomatoes with garlic)
1/4 c. pesto sauce
10 oz, Ziti or penne pasta (3 c. cooked)
8 oz. spinach leaves, fresh
6-8 oz. shredded mozzarella cheese
1 c. shredded Italian cheese

Directions:
Cook sausage, onion and garlic over medium high heat until meat is cooked through. Add tomatoes with juice to pan. Simmer until thickened slightly. Stir in pesto. Mix well. Combine pasta, spinach, mozzarella cheese and 1/3 c. of Italian cheese in large bowl. Stir in hot tomato sauce. Mix in remaining Italian cheese and transfer to 9X13 dish. (I divide it into two 9X13 pans.)
If not baked immediately, cover and freeze. Defrost in refrigerator overnight. Preheat oven to 375º. Bake for 45 minutes or until sauce bubbles and cheese melts.
