8 oz. reduced fat cream cheese softened
2 1/2 cups sweetened coconut
2/3 cup fresh pineapple pieces
1/2 cup dried cranberries
2 T chopped almonds

Let the cream cheese come to room temperature. Place all ingredients except almonds into a food processor. Blend until smooth. Add almonds Refrigerate for 30 minutes before serving. Serve with favorite cracker or pita chip.

When chopping fresh pineapple for dip. Cut the top off the pineapple. Cut approx. 2 inches from stem. Set top aside. Cut bottom to proper height for a bowl. Scoop out pineapple from bowl. Put dip into bowl.

Turn the top upside down. Trip pineapple to the proper shape for the head of the parrot. (wish I could load a picture) Then trim leaves to the shape of feathers. Shorter near head, longer as you go, until leaving the tail feathers original length. Use a piece of carrot for beak and a couple of peppercorns for the eyes. Mount to the bowl with a skewer.
