Ingredients: 8 oz. reduced fat cream cheese softened 2 1/2 cups sweetened coconut 2/3 cup fresh pineapple pieces 1/2 cup dried cranberries 2 T chopped almonds

Directions:Let the cream cheese come to room temperature. Place all ingredients except almonds into a food processor. Blend until smooth. Add almonds Refrigerate for 30 minutes before serving. Serve with favorite cracker or pita chip.

Notes: When chopping fresh pineapple for dip. Cut the top off the pineapple. Cut approx. 2 inches from stem. Set top aside. Cut bottom to proper height for a bowl. Scoop out pineapple from bowl. Put dip into bowl.
Turn the top upside down. Trip pineapple to the proper shape for the head of the parrot. (wish I could load a picture) Then trim leaves to the shape of feathers. Shorter near head, longer as you go, until leaving the tail feathers original length. Use a piece of carrot for beak and a couple of peppercorns for the eyes. Mount to the bowl with a skewer.
