4 chicken
flour
vegetable oil
1 tbsp
1 med onion
1 med pepper
salt
pepper

Directions:
Directions:
Take 4 chicken cutlets dredge in flour, and fry in veg oil with a little butter until brown (does not need to be cooked through) remove from pan and set aside take sliced onions and sliced peppers and add to the pan cook until al dente return chicken to the pan on top of the onions and peppers and 2 small cans of diced tomatoes stir salt and pepper to taste let this simmer for about 1/2 hour or until the chickren is done serve with rice or pasta.
