1 Tablespoon Olive Oil
1 Medium white onion, chopped
1 large red bell pepper, chopped
2 Tomatillos, chopped
2 boneless chicken breasts, chopped
1 teaspoon paprika
Sat & Pepper to taste
2 cups uncooked pasta
1 1/2 cups chicken broth
1 cup your favorite salsa verde
3 tablespoons chopped cilantro plus more for garnish
3 ounces cream cheese
1/2 lime, juiced
Lime zest, crumbled cotija cheese & diced avocado for serving

Directions:
Directions:
1. Heat a large pot to medium and add the olive oil. Add the onions, peppers and tomatillos. Cook for 5 minutes, stirring often.
2. Season the chicken with the paprika, salt and pepper. Add to the pot and cook for another 5 minutes to brown.
3. Add the uncooked pasta, broth, salsa verde and 3 tablespoons cilantro. Cover and simmer for 15-20 minutes, until the pasta is cooked through.
4. Uncover the pot and increase the heat. Cook for a few minutes more to reduce slightly.
5. Swirl in the cream cheese until melted. Remove from heat. Stir in the lime juice.
6. Serve with lime zest, crumbled cotija, diced avocado and cilantro.
