Fillets of freshly caught crappie
Zatarain's Fish Fry Original Seasoning Mix OR you may use
Seasoned cornmeal with salt and pepper

Cooking oil

Directions:
Directions:
Clean and fillet freshly caught fish.
Pour about 1 inch cooking oil in a large cast iron skillet. Heat oil to 350º on medium heat.
Rinse fish in cold water. Drain
Pour seasoning mix onto plate or into a bag. Roll or shake fish in the mixture until coated.
Fry fish a few pieces at a time until golden brown.
Drain on paper towels.
Discard the used seasoning mix.

May also bake in the oven at 450º for 15 minutes or until you can flake with a fork.
